Recipes!

You know you've been baking a lot when the only items on your grocery list include: eggs, flour, sugar, vegetable oil, milk, and cinnamon!

Blueberry Chocolate Breakfast Muffins
(made these today for Gavin's birthday breakfast tomorrow morning!)
1 1/2 C flour
3/4 C white sugar
1/2 t salt
2 t baking powder
1/3 C veg. oil
1 egg
1/3 C milk
1 C blueberries
1/4 C chocolate morsels

For the Topping:
1/2 C white sugar
1 t cinnamon
1 stick butter

Heat oven to 400. Grease and flour muffin pan (makes 8-12 muffins). Mix egg, oil, and milk in a mixer. Meanwhile, sift flour, sugar, salt, and baking powder together in a bowl. Add the dry ingredients to the wet ingredients until smooth. Gently toss in the blueberries and chocolate until fully incorporated. Pour mixture into muffin cups, I fill mine to the top! Bake for 20 minutes or so. Let muffins cool a few minutes on the counter. Meanwhile, melt the butter in the microwave. While butter melts, mix together the cinnamon and sugar topping. Roll each muffin top in the melted butter, then roll top in cinnamon/sugar mixture. Tada! Yummy muffins!

Chicken Snails
(for those picky little eaters like Gavin who won't touch a vegetable or fruit!)

3/4 lb chicken, cooked
1 med onion
1 chkn stock cube dissolved in 1 T boiling water
1 lg apple, peeled
2 T breadcrumbs
salt and pepper
handful of grated zucchini
flour for coating
veg. oil for frying

In a food processor, mix chicken, onion, chicken stock, apple, breadcrumbs and zucchini until smooth. Remove and shape into little logs. Spread flour onto a plate and use it to coat the logs. Heat the veg. oil in a frying pan and add the logs. Saute for about 10 minutes, turning occasionally.

Yummy Zucchini Bread
Whatever it takes to get the baby to eat a veggie!

3 C flour
1 t salt
1 t baking soda
1 t baking powder
3 t cinnamon
3 eggs
1 C veg oil
2 1/4 C white sugar
3 t vanilla extract
2 C grated zucchini
1 C chopped walnuts (I chopped then super fine so that G can eat it!)

Grease and flour two loaf pans. (I use bakers joy). Preheat oven to 325. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl. Beat eggs, oil, vanilla, and sugar together in mixer. Add sifted ingredients to creamed mixture and beat well. Stir in zucchini and nuts until combined. Pour batter into pans. Bake for 40-60 minutes.

And last, but not least, one of two cutest babies that came out of my oven : )
